Sodium Benzoate

Sodium benzoate is a widely used food preservative and additive with the chemical formula NaC7H5O2. It is the sodium salt of benzoic acid and occurs naturally in some fruits, such as cranberries, prunes, and apples, albeit in small amounts. However, it is predominantly manufactured industrially for its application in various food products.

This compound is highly soluble in water and has a white, crystalline appearance.
