Sodium ascorbate is the sodium salt of ascorbic acid (vitamin C), supplied as a white to very pale yellow crystalline powder that is highly soluble in water and less acidic than ascorbic acid itself. It is an effective, non-toxic antioxidant.

Its main uses are:
